Ingredients:

9. 16 ounces ground bison (can substitute ground grass-fed beef or turkey)
10. 8 outer leaves of romaine lettuce

Directions:

1. Heat olive oil in a skillet over medium-high heat. Add diced red onion and cook for 4 minutes until softened.
2. Reduce heat to medium and stir in chopped mushrooms. Cook for an additional 5 minutes, stirring occasionally.
3. Add balsamic vinegar to the skillet and continue cooking for another minute.
4. Stir in spinach and diced tomato, then cook for an additional minute. Mix in Dijon mustard and season with salt and pepper to taste. Drain off any excess liquid and set aside to cool in the refrigerator for 15 minutes.
5. Divide the ground bison into 4 equal portions and shape each into a ball. Use your fingers to create a well in the center of each ball, then stuff them with about 2 tablespoons of the spinach mixture. Seal the tops and flatten them into patties.
6. Grill or broil the burgers to your desired level of doneness:
To grill: Heat a grill pan with a little oil and grill each patty for 2-3 minutes on each side.
To broil: Set your oven broiler to high, place the patties on a foil-lined baking sheet on the top oven rack, and broil for 3 minutes on each side.
7. Allow the burgers to rest for a couple of minutes before serving.
